VARIETY AND VINES: Trebbiano 85% Chardonnay 15%;
PRODUCTION AREA: Vineyards located in the cool hills of the Sinello valley with mainly northern exposure;
SOIL – ALTITUDE: cool, gravelly, medium-textured soils with an altitude of 100-150 meters above sea level;
VITICULTURE: Abruzzese marquee with a density of 2000- 2500 plants per ha.;
HARVEST: last week of September, upon reaching full technological maturity, selecting the best grapes in the cooler hours of the day Chardonnay: last week of August, upon reaching full technological maturity, selecting the best grapes in the cooler hours of the day;
VINIFICATION: brief contact at 12°C of the skins with the must, soft pressing and static sedimentation of the flower must at low temperatures, inoculation of selected yeasts and fermentation at 16-18°C in steel tanks;
AGING – STORAGE: 5-6 months in steel tanks, including 2 months on fine lees; bottle aging for 1 month before release. Store in a cool place at a temperature of about 5-7°C;
ALCOHOLIC STRENGTH: 12.5% vol;
COLOR: deep straw yellow, intense and brilliant;
BOUQUET: delicate and complex bouquet, with hints of white flowers, tropical fruit and citrus fruits and pleasant balsamic notes;
TASTE: dry, soft and harmonious with good body, fullness and flavor;
SERVING TEMPERATURE: 10-12 °C;
GASTRONOMIC ACCOMPANYMENTS: seafood appetizers, fish dishes in general and fresh cheeses. Also excellent as an aperitif.
