VARIETY AND GRAPE VARIETIES: 100% Pecorino;
AREA OF PRODUCTION: vineyards located in the cooler areas of the Sinello valley territory, with mainly northern exposure;
SOIL – ALTITUDE: medium-textured, loose, cool clay soils with an altitude of 100-150 meters above sea level;
VITICULTURE: espalier with a density of 3800 plants per ha and production of 11 Ton per ha;
HARVEST: in the period following the first week of October, upon reaching technological and phenolic maturity, selecting the best grapes;
VINIFICATION: de-stemming of the grapes and contact of the skins with the must for 8 hours at a temperature of 18° C, separation of the must from the skins and its clarification by decantation, transfer of the clear must into steel tanks for alcoholic fermentation at a temperature of 16° C;
AGING – STORAGE: 4 months in steel tanks of which 1 month in contact with the fine lees, bottle aging for about 10 days before release for consumption. Store in a cool place at a temperature of 12°-14° C;
ALCOHOLIC STRENGTH: 13% vol. alc;
COLOR: straw yellow, pale, brilliant;
BOUQUET: delicate, fine bouquet with floral sensations and fresh notes of ripe tropical fruit;
TASTE: harmonious, balanced, soft and fresh with medium body and persistence;
SERVING TEMPERATURE: 12-14 °C;
GASTRONOMIC ACCOMPANYMENTS: appetizers and fish dishes, light and summer dishes. Also ideal as an aperitif.

Pecorino IGP Terre di Chieti is a white grape variety with a bright straw yellow color. It has a fruity citrus aroma, with nuances that lean toward tropical fruit, white peach and exotic fruits such as papaya and grapefruit. It has a persistent and very fresh taste with a slightly balsamic finish. Prominent freshness and good structure. The acidic streak and savory flavor are balanced
with excellent persistence and great smoothness. It can be successfully paired with appetizers and roasted fish, ideal with raw and first courses.
