VARIETY AND GRAPE VARIETIES: white grapes, 100% Pecorino;
AREA OF PRODUCTION: vineyards located in the cool hills of the Sinello valley with mainly northern exposure;
SOIL – ALTITUDE: medium-textured, mixed-clay soils with an altitude of 150-200 meters above sea level;
HARVEST: early September;
VINIFICATION: pellicular maceration, temperatures vary between 13-16 °C to favor the extraction of substances contained in the skin of the berries. Malolactic fermentation not carried out. AGING: 85% steel – 15% barrique;
ALCOHOLIC STRENGTH: 13.5% vol;
COLOR: straw yellow with greenish reflections;
BOUQUET: fresh, floral, fruity, pleasantly spicy;
TASTE: fresh, smooth and persuasive with balsamic notes in the aftertaste;
SERVING TEMPERATURE: 10-12 °C;
GASTRONOMIC ACCOMPANYMENTS: excellent with appetizers, delicate first and second courses. Ideal with all seafood cuisine.
