VARIETIES AND VINES: white berried grapes;
PRODUCTION AREA: vineyards located in the hilly areas of Abruzzo
SOIL – ALTITUDE: fresh, gravelly soils, basically of medium texture sandy with an altitude of 100-150 meters above sea level;
VITICULTURE: from native Abruzzo vines, whose final product takes the name of raisins
HARVEST: manual, in the second and third ten days of September;
VINIFICATION: crushing and soft pressing of the grapes, “debourbage” of the must at 10-12 °C, addition of selected yeasts and fermentation of the clear must at 18 °C in tanks steel;
AGING – STORAGE: 1 month in steel tanks;
ALCOHOL CONTENT: 13% vol;
COLOUR: pale straw yellow, brilliant with slight greenish reflections;
BOUQUET: Intense, fresh and fruity.
TASTE: Fresh, delicate, medium body and persistence;
SERVING TEMPERATURE: 10 – 12 °C;
GASTRONOMIC COMBINATIONS: Perfect with all fish-based dishes, from appetizers to
second. Excellent with fresh or stretched curd cheeses. Also excellent as an aperitif.
Passerina
La Passerina is a wine with a straw yellow hue with golden reflections, characterized by a freshness and an unparalleled sensory pleasure. On the nose, fruity notes of peach and peach are revealed apricot, melon and almond, while on the palate it is dry, slightly sapid, of medium intensity and structure. This fine wine goes wonderfully with spring dishes enriched with herbs spontaneous and field, making it also ideal to accompany aperitifs or delicacies a fish based. The versatility of the Passerina gives it the ability to adapt to different gastronomic nuances.
